Creamy Corn Soup

Ingredients

  • 1TBSP butter
  • 6 scallions
  • 1 stalk celery, chopped small
  • 2 cups corn
  • 1/2 tsp salt
  • 1/2 tsp dried basil
  • 1 cup vegetable broth
  • 1 cup milk

Directions

  1. Melt butter in medium saucepan.

  2. Add scallions, celery, corn, salt, basil.

  3. Increase heat to medium. Stir and cook about 8 minutes.

  4. Add 1 cup broth and heat to boil.

  5. Decrease heat to low, cover and cook for 5 minutes.

  6. Soup to blender and purée until smooth. Pour in milk. Reheat in saucepan.
