SWEET POTATO MINI CUPCAKES WITH SPICED MAPLE BUTTERCREAM

1 3/4 cups pumpkin puree may be substituted for sweet potato.

Ingredients

  • 1 (15.25 oz.) box spice cake mix
  • 1 3/4 c. mashed sweet potato
  • 3/4 c. whole buttermilk
  • 1/4 c. vegetable oil
  • 3 large eggs
  • Spiced Maple Buttercream

Directions

  1. Preheat oven to 325 degrees.

  2. In a large bowl, stir together cake mix, sweet potato, buttermilk, oil, and eggs until smooth. Divide evenly among prepared muffin cups.

  3. Bake for 15 minutes or until a wooden pick inserted into the centers of the cupcakes comes out clean. Let cool in pans for 2 to 3 minutes. Remove from pans, and let cool completely on wire racks.

  4. Frost with Spiced Maple Buttercream.

  5. Makes about 5 1/2 dozen.
