GARLIC AND PARSLEY SHOESTRING FRIES

Ingredients

  • 1/2 c. peanut oil, plus more for frying
  • 1/4 c. chopped garlic
  • 1 (28 oz.) package frozen shoestring French fries
  • 2 tsp. salt
  • 1/2 c. chopped fresh parsley

Directions

  1. Place 1/2 cup peanut oil and garlic in a small saucepan over medium heat. Bring to a low boil, and simmer for 6 minutes or until garlic is brown and crispy. Remove from heat to cool.

  2. Pour oil into a large stockpot or Dutch oven, filling halfway. Heat over high heat until a candy or deep-fry thermometer registers 360 degrees. Carefully add fries, in batches, and fry for about 5 minutes, or until crisp and brown. Using a slotted spoon, transfer fries to a rimmed baking sheet.

  3. Drizzle with garlic oil, and sprinkle with salt and parsley; toss to coat. Serve immediately.
