Curried Turkey Wrap Sandwich

Ingredients

  • *4 Cilantro or other herbed wrap, or large (12”) flour tortillas
  • *1 pound JENNIE-O TURKEY STORE® Pre-sliced Honey Cured Turkey Breast
  • *2 cups White rice, cooked and chilled
  • *1 cup Pineapple, chopped and drained
  • *1/2 cup Golden raisins
  • *1/2 cup Roasted red peppers, diced
  • *6 Green onions, minced
  • *1 1/2 teaspoons Curry powder
  • *2 tablespoons Water, boiling
  • *1/2 cup Mayonnaise

Directions

  1. In a medium bowl mix the rice, pineapple, raisins, roasted peppers, and green onion. In a small bowl, mix the curry powder with boiling water and let sit for 10 minutes. This helps bring out the flavor of the curry powder. When the curry mixture is cool, stir into the mayonnaise, and add to the rice mixture. Lay out the wrap breads, and arrange 4 ounces of turkey on each. Divide the rice mixture equally among the wrap breads, and wrap just like a burrito…folding in two opposing ends, and then rolling the whole thing up, unfolded end to unfolded end, keeping it firmly together. Wrap the sandwich with plastic wrap and store in the refrigerator until ready to serve. These can be made the day before serving. When ready to serve, slice in half slightly diagonally and enjoy. This recipe can be transformed into a salad by serving the rice mixture over salad greens and topping with the turkey cut into strips. Or you can mix the turkey (chopped) into the rice mixture, and stuff it into a tomato or a melon half.
