Hot and sour soup

Ingredients

  • 4 C. chicken soup
  • 1 Tbs. each minced garlic and ginger
  • shiitake or straw mushrooms
  • soba noodles
  • 1 1/2 Tbs. soy sauce
  • 1/8 C rice vinegar
  • 1/2 C cubed firm tofu
  • black pepper
  • dash of sesame oil

Directions

  1. Bring broth to boil with garlic and ginger

  2. Add noodles and cook until softened

  3. Add soy sauce, rice vinegar, tofu, black pepper and sesame oil. Cook three or four minutes more. Garnish with cilantro, scallions or chives
