Pfeffernüsse

Ingredients

  • 4 cups flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp ground white pepper
  • 1 tsp ground cinnamon
  • 1/2 tsp ground cardamom
  • 1/2 tsp ground ginger
  • 3/4 tsp salt
  • 3/4 cup butter or margarine, softened
  • 1-1/4 cups brown sugar, packed
  • 2 eggs
  • 3/4 cup almonds, finely chopped (optional)

Directions

  1. Preheat oven to 350°F (180°C).

  2. Combine dry ingredients and set aside.

  3. In a separate bowl, beat butter and sugar together until light and fluffy.

  4. Add eggs one at a time, beating well after each addition.

  5. Stir in dry ingredients 1/2 cup at a time.

  6. Add almonds, if desired.

  7. Roll into one-inch balls and arrange one inch apart on an ungreased baking sheet.

  8. Bake 11-14 minutes (lower number => less crunchy, higher number => crunchier).

  9. Cool on wire racks.

  10. Roll in powdered sugar, if desired.

  11. Can be eaten immediately, or stored in an airtight container for three days to mellow flavors.

  12. Makes 16 dozen.
