Christmas Stollen

Ingredients

  • 2.5 cups flour (add xanthan gum)
  • 2 tsp baking powder
  • 3/4 cup sugar
  • 1/2 tsp salt
  • 1/4 tsp mace or nutmeg
  • 1/4 tsp of cardamom or cinnamon
  • 1/2-3/4 cup of ground almonds
  • 1/2 cup cold butter
  • 1 cup cottage cheese
  • 1 egg
  • 1/2 tsp vanilla
  • 1/4 tsp almond extract
  • 2 tbsp rum
  • 1/2 cup currants
  • 1/2 cup raisins
  • 1/4 dried peel
  • Melted butter
  • Powdered sugar

Directions

  1. Mix dry ingredients and almond meal in a bowl. Cut in the butter and mix to coarse crumbs. Sieve the cottage cheese and add to the egg, vanilla, almond extract and the fruit. Mix well and add to dry mixture. Stir until moistened, knead lightly 6-10x until smooth (will still be quite dry), then form into an oval shape (8×10 or 9×12), brush with melted butter and then crease lightly just off center lengthwise, and then fold over itself, place on parchment lined pan, bake at 350 for 35-45 min until golden brown. Brush with more butter and cool, then sprinkle with powdered sugar before serving.
