Lentil and Parsnip Pottage (soup!!)

Serves 4 people

Ingredients

  • 3 slices bacon, chopped
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 parsnips, chopped
  • 1/3 cup red lentils
  • 4 cups vegetable boulion
  • salt and pepper
  • Fresh chives, chopped (to garnish)

Directions

  1. Heat large pan, add bacon and dry-fry for 5 minutes

  2. Add chopped onion, carrots, and parsnips and cook for 5 minutes

  3. Add lentils to pan and stir to mix with veggys

  4. Add boulion to pan and bring to boil. Cover and simmer for 30-40 minutes or until tender

  5. Transfer soup to blender in small batches, for a few seconds

  6. Return to pan and reheat gently

  7. Season with salt and pepper to taste

  8. Garnish with choppe fresh chives
