Roast leg of Lamb (boneless)

Ingredients

  • Leg of lamb
  • 3 Tablespoons of Butter or Ghee
  • 3 Tablespoons of Dijon Mustard
  • 4-5 Cloves of garlic, peeled
  • Thyme/Rosemary/Taragon

Directions

  1. remove lamb from fridge and allow to come to room temp

  2. Pre-heat oven to 450 Degrees/gas mark 8

  3. Melt the butter and mustard together

  4. Bush lamb with mustard-butter mix, and sprinkle with any combination of herbs

  5. Season

  6. Place in small roasting tray with garlic

  7. Roast in oven for ten mins on high temp

  8. reduce oven temp to 350 Degrees/gas mark 4 and cook for 15 mins per pound/500g

  9. OR

  10. Use a meat thermometer and cook till internal temp reaches 145 degrees (medium-rare) or 160 degrees (medium)

  11. Let the meat rest for 5-10 mins after coming out the oven
