Cucumber Salad with Scallops

Ingredients

  • 4 cucumbers, medium (2 lbs)
  • 2 tbsp fish sauce
  • 2 limes, juice of
  • 1 clove garlic
  • Red pepper flakes
  • 1 tbsp lemongrass, minced
  • 1/2 tsp sugar
  • 6 cups mixed salad greens
  • 1 lb sea scallops
  • 1 tbsp canola oil
  • 1/8 tsp cayenne pepper
  • 1/2 cup chopped mint
  • 2 tsp dark sesame oil

Directions

  1. Can use mint, cilantro or a mix instead of basil

  2. Can use shrimp or chicken
