Cheesy Bacon Potato Soup

Ingredients

  • 4 tbsp. margarine
  • 7-8 medium potatoes
  • 1/2 tsp. salt
  • 1 can cream of celery or cream of chicken soup
  • 1 lb. bacon, cooked and crumbled
  • 1 onion, chopped
  • 1/2 tsp. garlic salt
  • 1/2 tsp. pepper
  • 1 lb. velveeta cheese
  • 1-1/2 to 2 soup cans of milk

Directions

  1. Peel potatoes and cut into small pieces. Saute onion in margarine. Add potatoes and enough hot water to cover. Season with garlic salt, salt, and pepper. Cook slowly until potatoes are done. Watch carefully, it will burn! Stir in soup and bacon. Cut cheese into small pieces and add, stirring until melted. Add 1-2 cans of milk, depending on how thick you want the soup.
