Lemony Shrimp Linguine

Serves 6 people

Ingredients

  • 1 12 oz.box linguine
  • 1/4 cup olive oil
  • 1/3 cup fresh lemon juice, plus 1 T lemon zest
  • 1/2 t salt
  • 1/4 t black pepper
  • 1 1/2 lbs. Peeled and deveined shrimp
  • 1 onion sliced thin
  • 3 cloves sliced garlic
  • 1/2 cup parsley

Directions

  1. Bring a pot of lightly salted water to a boil. Add linguine and cook 9 minutes.

  2. Meanwhile in a small bowl, whisk 2 T of olive oil with the lemon juice, zest, salt and pepper. Set aside.

  3. Heat 1 T olive oil in a large skillet over medium heat.

  4. Add shrimp. Saute 1 minute, flip and saute 1 to 2 more minutes until just cooked

  5. Remove to plate

  6. Add remaining 1 T olive oil to skillet – stir in onions.

  7. Cook 7 minutes until softened

  8. Stir in garlic – cook 1 minute

  9. Stir in reserved olive oil- lemon mixture

  10. Bring to a simmer and cook 1 minute

  11. Remove cooked pasta from pot using tongs and add to skillet along with 1 cup of the pasta water and the cooked shrimp.

  12. Bring to a simmer and cook 1 minute

  13. Stir in parsley and serve immediately
