Aunt Bills Microwave Candy

You will need to use a microwave-safe bowl three times larger than the amount of ingredients, or it will boil over.

You may have to adjust the power according to the wattage of your microwave

Prep time: 5 minutes
Cook time: 30 minutes
Serves 24 people

Ingredients

  • 2 cups sugar
  • 1 teaspoon baking soda
  • 1 cup buttermilk
  • 3/4 cup margarine
  • 1 teaspoon vanilla
  • 2 cups chopped pecans

Directions

  1. • Butter 7- or 8-inch-square dish. In large microwave-safe bowl, combine sugar, baking soda, buttermilk and margarine. Cover with plastic wrap. Punch holes in plastic so steam can escape.

  2. • Microwave at 50 percent for 15 minutes. Stir and continue at 50 percent for 13 to 15 minutes until softball forms in cold water, 236 degrees on candy thermometer. (Do not put thermometer in microwave oven.)

  3. • Add vanilla, beating with electric mixer until soft peaks form. Watch closely. Stir in nuts and pour into prepared dish. Cool, cut and enjoy
