Moosewood Banana Bread

Ingredients

  • 1 1/2 cups melted butter
  • 1 1/2 cups brown sugar OR honey
  • 4 eggs, room temp
  • 1 T vanilla extract
  • zest of 1 orange
  • 2 cups whole wheat flour
  • 2 cups white flour
  • 1 tsp salt
  • 1/2 t baking soda
  • 1 T baking powder
  • 1 t nutmeg
  • 2 t ground cinnamon

Directions

  1. Beat first 5 ingredients together in large bowl, beginning with butter and sugar; add eggs one at a time. Add remaining ingredients, beat til light in color.

  2. Sift dry ingredients together twice.

  3. 2 cups well-mashed ripe bananas soaked in 1 cup strong coffee

  4. Add flour mixture and bananas alternatively to butter mixture, beginning and ending with flour. Mix gently but do not overbeat. Add up to 1 cup each raisins, walnuts.

  5. Bake in generously buttered loaf pans sprinkled with sesame or poppy seeds. Bake 350 F 40 – 50 minutes.

  6. Cool 10 minutes in pan the remove to finish cooling.
