Holiday Guacamole

Serves 8 people

Ingredients

  • 1/3 finely chopped onion
  • 3 - 4chopped serrano chiles
  • 1 tsp coarse salt
  • 2 lbs of ripe avocado
  • 2-3 Tablespoons fresh lime juice
  • 3/4 c. finely diced, peeled pear and halved seedless grapes
  • 1/2 c. pomegranate seeds, plus 1/4 c.

Directions

  1. Mash onions, serrano chiles, and salt into a rough paste.

  2. Gradually add the pulp from avocados and stir in lime juice.

  3. Fold in fruit and seeds and sprinkle the top with 1/4 c. additional pomegranate seeds.
