Beef & Red Wine Stew

Ingredients

  • 450g stewing beef
  • 1/2 tsp salt
  • 1/2 tsp ground pepper
  • 2 tablespoons beef dripping
  • 1 branch rosemary
  • 2 sprigs thyme
  • 1 onion finely chopped
  • 3 ribs of celery finely chopped
  • 2 carrots, sliced into 1/4 inch rounds
  • 3 medium potatoes, peeled & cut into 1 inch pieces
  • 2 cups homemade stock
  • 2 cups red wine
  • 1/2 cup tomato paste

Directions

  1. Sprinkle the beef with salt & pepper then set aside.

  2. Melt the dripping in a casserole pot over a medium-high heat – add the rosemary & thyme & fry gently for 2-3mins then remove from the pan.

  3. Add the beef & brown for 5 mins then remove from the pot.

  4. Add the onion, celery & carrots and fry for about 6 mins until tender.

  5. Return the meat to the pan & add the potatoes.

  6. Add the stock & wine then stir in the tomato paste.

  7. Cover and put in the oven on a medium to low heat for about 2hrs.

  8. Season & serve
