Baked sweet potatoes

Ingredients

  • 4 medium sweet potatoes, scrubbed
  • 4 tsp olive oil
  • 4 tbsp mascarpone or crème fraîche
  • 4 tbsp chopped fresh chives

Directions

  1. Preheat the oven to 160˚C/fan 140˚C/gas 3. Rub the sweet potatoes with the olive oil and place each on a large piece of kitchen foil. Sprinkle with sea salt, wrap tightly and bake for 2.5 hours, until tender.

  2. Unwrap the foil, cut a cross in the top of each potato and gently squeeze the potatoes from the base. Fill with a dollop of mascarpone or crème fraîche, season with black pepper and sprinkle with chives.
