Warm Bread Pudding (Indian inspired)

Ingredients

  • 3⁄4 -1 stick of unsalted sweet cream butter
  • 1 loaf white bread or any other sweet bread like brioche, challah or cinnamon raisin bread, crumbled 4-5 green cardamom seeds, peeled and crushed
  • scant 1⁄4 cup raisins
  • scant 1⁄4 cup slivered almonds scant 1⁄4 cup walnut
  • scant 1⁄4 cup cashews
  • 1 cup milk
  • 1 can of sweetened condensed milk (use as needed) 1⁄2 tsp ground nutmeg
  • 1⁄2 tsp ground cinnamon

Directions

  1. n a deep sauté pan, melt the butter and add the crushed cardamom along with the raisins and nuts. When the nuts are golden brown, add the crumbled bread to it and continue frying until the bread turns golden brown.

  2. Meanwhile, in a sauce pan heat the milk along sweetened condensed milk. Add the ground nutmeg and cinnamon and keep stirring it till it blends into the milk. Pour the mixture over the fried bread.

  3. Mix well and continue simmering till the bread absorbs and cooks in the milk mixture, turning soft. Serve warm à la mode or chilled.
