Isabelle’s Sugar Crinkles

Ingredients

  • 1 c. shortening, soft
  • 1-1/2 c. turbinado sugar
  • 2 T. egg replacer in 4 T. water (or 2 eggs)
  • 2-3/4 c. WW pastry flour
  • 2 t. cream of tartar
  • 1 t. baking soda
  • 1/2 t. salt
  • 2 T. sugar
  • 2 t. cinnamon

Directions

  1. Whip first 3 ingredients until fluffy.

  2. Sift next 4 ingredients together and stir into first mixture. (If bran separates from the flour, stir it back in.)

  3. Roll into balls about the size of a walnut. Roll in a mixture of the sugar and cinnamon.

  4. Place 2-3 inches apart on ungreased cookie sheet (Airbake pans or top rack work great). Bake until lightly browned, but still soft at 400˚ for 8-10 minutes. These cookies puff up at first, then flatten out with crinkled tops. Makes 3-4 dozen.
