Jeanne’s Sugar Cookies

Serves 24 people

Ingredients

  • 1/2 c. oleo
  • 1/4 t. salt
  • 1 c. turbinado sugar
  • 1 T. egg replacer in 2 T. water
  • 1/2 c. soymilk
  • 1/2 t. vanilla
  • 3 c. WW pastry flour

Directions

  1. Cream oleo and sugar until fluffy. Add egg replacer, milk, vanilla, salt and beat well. Add flour 1 c. at a time and mix until smooth—but don’t overmix and build the gluten.

  2. Roll 1/4" thick on lightly floured board, cut, decorate—or use the dreaded cookie press and avoid the rigamarole.

  3. 375˚ for 15 minutes
