Tucker’s Grill’s queso

Ingredients

  • 1/4 cup butter
  • 1/4 cup chopped onion
  • 1/4 cup chopped jalapeno
  • 2 pounds cheese, grated (Amerimelt, American cheese or cheddar)
  • 1 cup milk
  • 2 cups salsa
  • 1 teaspoon granulated garlic
  • 1/4 cup diced green chilies

Directions

  1. Melt butter in a skillet over medium heat. When sizzling, add the onions and jalapeno and sauté until onion turns translucent, 5 to 7 minutes. Set aside.

  2. Fill the bottom section of a double boiler half-full with water and bring to a simmer. In the top section place the cheese and milk, and melt, stirring frequently. Stir in the salsa, granulated garlic, green chilies, and the reserved onions and jalapeno mixture. Stir until smooth and creamy. Serve with chips of choice. Makes about 4 cups of dip.
