No Butter Scones

Ingredients

  • 2 cups all purpose flour
  • 1 Tablespoon baking powder
  • 1/2 teaspoon salt
  • 2 teaspoons cinnamon (or other spices)
  • 1 1/4 cup Raisins (cranberries, mini chocolate chips, nuts, combinations, etc)
  • 1/3 cup granulated sugar
  • 1 1/4 cups cream, cold
  • 1-2 teaspoons extract (vanilla, almond, etc; optional)
  • Topping
  • Eggwash or melted butter
  • Sanding sugar

Directions

  1. eheat oven to 375.

  2. Combine dry ingredients in a large bowl, stirring in raisins or other add-in last. With a spatula or dough scraper, add in cream until ingredients are just combined. Form a ball in the bowl and then place on a floured surface. Flatten and fold a fed times. Then flatten into circle about 1” thick.

  3. For traditional scones, cut circle into eight wedges, and then place on parchment lined cookie sheet. Alternatively, use a biscuit cutter to make the size that you want. Eggwash or butter each piece, then sprinkle with sanding sugar. Bake about 15 minutes. Let cool on baking sheet about 10 minutes. Best served warm from the oven.
