Katie’s Apple Pancakes

Ingredients

  • 1 c. WW pastry flour
  • 3 T. sugar
  • 1/2 t. salt
  • 2-3 eggs (or egg replacer)
  • 3/4 to 1 c. soymilk
  • 1 t. vanilla
  • diced apple
  • Vanilla ice cream

Directions

  1. Mix first 7 ingredients well. Fry—traditionally, these are done in a heavy skillet with lots of oil. You can do a nonstick pan version, but the next step really relies on that fat.

  2. Roll in a sugar/cinnamon mixture. Serve with a big scoop of vanilla ice cream.

  3. Of course, the recipe is always doubled, tripled, quadrupled as this is too rich for all but special family gatherings. As with all pancakes, it’s the cooking that’s time-consuming. As these are best piping hot out of the pan, this works best as a social gathering where everyone eagerly awaits their turn. Keep the coffee, tea, and spiced cider flowing for best results.
