Bill Granger’s scrambled eggs

Do not put more than two servings of eggs in one pan, or the eggs will become overcooked. If you’re cooking for a crowd, double the recipe and make batches.

Ingredients

  • 2 eggs
  • 1/3 cup cream
  • 1/4 tsp salt
  • 1/2 tbsp butter

Directions

  1. Whisk together eggs, cream, and salt.

  2. Melt butter in a frying pan over medium-high heat. Pour in egg mixture and, after about 20 seconds, using a spatula or wooden spoon, push the egg mixture on the outside of the pan to the center. Let eggs set for an additional 20 seconds, then repeat.

  3. When all the eggs are just set in the center of the pan (they’ll look soft and somewhat wet) turn them out onto a plate.
