Apricot bars

Ingredients

  • 2/3 cup dried apricots
  • 1/2 cup butter (or margarine)
  • 1/4 cup white sugar
  • 1-1/3 cups all-purpose flour
  • 2 eggs
  • 1 cup brown sugar, packed
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 tsp vanilla extract
  • 1/2 cup shredded coconut

Directions

  1. Preheat oven to 350F.

  2. Rinse apricots, cover with water, and boil 10 minutes. Drain, cool, and chop.

  3. Combine butter or margarine, white sugar, and 1 cup flour; blend together until crumbly. Pack into bottom of greased 8 × 8-inch square pan. Bake in moderate oven (350F) about 15-18 minutes, until lightly browned.

  4. Beat eggs and vanilla. Gradually beat in brown sugar.

  5. Sift remaining 1/3 cup flour with baking powder and salt. Blend into egg mixture.

  6. Stir in coconut and apricots. Spread over baked layer.

  7. Bake at 350F for about 30 minutes longer.

  8. Cool. Cut into bars.
