Colorado Cache Layered Salad

Ingredients

  • 1/2 head iceberg lettuce
  • 10 oz. fresh baby spinach
  • 4 eggs hard boiled and chopped
  • 1 bunch green onions, chopped (including tops)
  • 1 slice bacon fried crisp and crumbled
  • 1 10 1/2 oz. package frozen peas, thawed
  • 1 tsp. sugar
  • salt and pepper
  • 1 cup swiss cheese grated
  • Dressing: 1 cup sour cream & 1 cup mayo mixed together

Directions

  1. Wash and drain lettuce and spinach. Tear spinach and lettuce into pieces and place as first layer in bottom of serving bowl. Layer other ingredients: eggs, onions, bacon and peas. Sprinkle top with 1 tsp. sugar and salt and pepper. Frost the top with sour cream/mayo mixture, garnish with swiss cheese. Cover and refrigerate overnight.
