Blueberry Coffee Cake

Ingredients

  • 2 cup almond flour
  • 1/2 cup coconut flour
  • 2 tsp baking soda
  • pinch of salt
  • 1/2 cup butter or coconut oil
  • 6 eggs
  • 2 tsp vanilla
  • 1 tsp lemon juice
  • 1-1/2 tsp liquid stevia or desired sweetener
  • 2 cups fresh blueberries

Directions

  1. Preheat oven to 350

  2. Combine dry ingredients in a mixing bowl

  3. In a separate large bowl, add wet ingredients and mix well

  4. Add dry ingredients to wet ingredients and mix to combine

  5. Fold blueberries into batter and press the dough into a greased 8×8 pan and bake 30-35 min until golden brown
