Chicken with Lemon & Oregano

Can be cooked in oven or on stovetop

Prep time: 10 minutes
Cook time: 45 minutes
Serves 4 people

Ingredients

  • Chicken portions, approx 700 grams
  • 2 Red onions, cut into wedges
  • 2 cloves garlic, crushed
  • 1 t oregano
  • Zest of 1 lemon
  • 2 sprigs fresh rosemary
  • 1/2 C each white wine and chicken stock
  • 2 T lemon juice
  • 1/4 C cream
  • 2 T chopped parsley

Directions

  1. Brown chicken and onion wedges.

  2. Add garlic, cook 2 minutes.

  3. Add remaining ingredients, except cream & parsley.

  4. Place in baking dish and cook in oven at 180oC approx 45 minutes, or until chicken is cooked.

  5. Or cook on stovetop, simmering on low heat until chicken is cooked.

  6. Stir in cream and sprinkle with parsley to serve.
