Ingredients

  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 1 tsp cumin
  • 1 tsp cinnamon
  • 1 tsp sugar
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 8 chicken thighs
  • 1 tbsp oil
  • 1 cup chopped green onions
  • 4 cups fresh corn kernels, ~6 lg ears
  • 1 lg tomato, chopped
  • 1 red bell pepper, chopped

Directions

  1. eheat oven to 375.

  2. Combine the first 7 ingredients (garlic powder through black pepper). Rub on chicken thighs.

  3. Heat oil in a lg oven-proof skillet. Add chicken and cook until browned, ~5 mins per side. Transfer to a plate.

  4. Combine onions, corn, tomato, and bell pepper in a 13 × 9″ pan. Place chicken on top of corn mixture. Cover and bake 15 mins. Uncover and bake an additional 15 mins.
