Chocolate Chip Biscotti

Ingredients

  • 1 1/2 cups flour
  • 3/4 cup sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 2 eggs, lightly beaten
  • 1/3 cup mayonnaise (Hellman's)
  • 2 teaspoons vanilla
  • 6 ounces chocolate chips
  • 3/4 cup chopped walnuts (optional)

Directions

  1. Place the flour, sugar, baking powder and cinnamon in a medium mixing bowl and stir with a wooden spoon to combine

  2. Add the remaining ingredients and stir until the mixture is thoroughly combined

  3. Place parchment paper (two if recipe is doubled) on bottom of 9" cake pan, butter sides

  4. Spread dough evenly in pan using an offset spatula

  5. Bake at 325 degrees for 25 minutes

  6. Let cool 5 minutes

  7. Carefully loosen biscotti from sides of pan and gently turn over onto clean parchment

  8. Lay cut side down on the cookie sheet and bake for another 5 minutes

  9. Cut circle in half, then cut each half into 1/2 inch slices

  10. Turn the slices over, return to the oven to bake on the other side for 5 minutes or until golden
