White Chocolate Buttercream

Ingredients

  • 18 oz (3-6 oz pkgs) white baking chocolate, coarsely chopped
  • 1/4 cup milk
  • 1 cup vegetable shortening (solid)
  • 1 cup butter or margarine
  • 2 tsp pure vanilla extract
  • 8 cups confectioners sugar
  • 1/4 cup milk

Directions

  1. Microwave chocolate with 1/4 cup milk in microwaveable bowl on medium-high for 1-2 minutes.

  2. Stir chocolate halfway during cooking time.

  3. Do not overheat, chocolate will continue to melt while being stirred.

  4. Cream butter and shortening with electric mixer, add vanilla.

  5. Gradually add sugar 1 cup at a time, beating well on medium speed. Scrape sides of bowl and bottom often.

  6. When all sugar has been mixed icing will appear dry.

  7. Add milk and beat at medium speed until light and fluffy.

  8. Beat in chocolate.
