Mocha Buttercream

(makes 3 cups)

Ingredients

  • 1/2 cup solid vegetable shortening
  • 1/2 cup (1 stick) butter, shortening
  • 1 square, unsweetened chocolate, melted
  • 1 TBSP instant coffee
  • 1 tsp clear vanilla extract
  • 4 cups confectioners sugar
  • 2 TBSP milk

Directions

  1. In a large bowl, cream shortening and butter

  2. with electric mixer until light and fluffy.

  3. Add melted chocolate, instant coffee and vanilla, mix well.

  4. Gradually add sugar, one cup at a time, beating well on medium speed; scrape sides and bottom of bowl often.

  5. Icing will appear dry, add milk beat @ medium speed until light and fluffy.
