Mexican “Spicy” Rice

I usually make one recipe of this and serve it with tortillas, sour cream, shredded cheese, hot sauce, and chips and it is plenty for all 7 Jobes. You could also have lettuce or tomato as possible toppings.

Prep time: 5 minutes
Cook time: 40 minutes

Categories: one pot, quick and easy

Ingredients

  • 1 lb ground beef
  • 1 packet taco seasoning mix
  • garlic powder
  • cumin
  • 1 (15 oz) can black beans)
  • 1//2 (16 oz) can refried beans
  • 3/4 cup hot sauce
  • 3 cups water
  • 3 beef bouillon cubes
  • 3 cups instant rice

Directions

  1. Brown ground beef and drain if necessary.

  2. Add taco seasoning mix, garlic powder, cumin, black beans, refried beans, water and bouillon, and hot sauce to meat and mix well.

  3. Bring contents of pot to a boil and simmer 5-10 minutes.

  4. Mix in rice, cover pot, and remove from heat. Let stand 6-7 minutes.
