Stir Fry “Spicy” Rice

I’ve started buying the already chopped garlic in a jar and it saves me a lot of time when a recipe calls for chopped garlic. I don’t have to peel and chop the garlic, just have to measure out what I need into the recipe.

Prep time: 5 minutes
Cook time: 40 minutes

Categories: one pot, quick and easy

Ingredients

  • 1 (12 oz) package John Soule's precooked chicken, cubed
  • 1.25 tsp chopped garlic
  • pinch of ground ginger
  • onion flakes
  • 2 lbs frozen stir fry veggies
  • 3.5 cups beef broth
  • 1/4 cup soy sauce + a bit more
  • 1/4 cup teriyaki sauce + a bit more
  • 3.5 cups instant rice

Directions

  1. Brown the garlic in a little bit of oil and add the cubed chicken.

  2. Add frozen veggies and saute a bit.

  3. Add ginger, onion, broth, soy sauce, and Teriyaki sauce.

  4. Bring contents of pot to a boil and simmer until frozen veggies are cooked through.

  5. Mix in rice, cover pot, and remove from heat. Let stand 6-7 minutes or until rice is done.
