Salsa Chicken

This is really yummy! I serve it with yellow rice and black beans. It can turn out pretty spicy depending on what level of hot sauce you use. If you don’t want it to be too spicy for the kids, you might want to stick with mild hot sauce. You could try using regular coke instead of diet if you prefer, but it might be on the sweet side if you don’t that.

Ingredients

  • 8 bonelees, skinless chicken breasts
  • 2 (16 oz) jars hot sauce/salsa
  • 2 (12 oz) cans diet coke

Directions

  1. In a large skillet, cook chicken over medium high heat in just enough oil to help keep it from sticking.

  2. Sprinkle lightly with salt, pepper, and garlic.

  3. Keep turning and cooking until just brown.

  4. Add the the jars of salsa and the cans of soda.

  5. Reduce heat to medium low and simmer for 15-20 minutes, covered.

  6. Remove lid, turn chicken, and continue to simmer until sauce has thickened to desired consistency. (I just made sure that the chicken was cooked through.)
