Curry Noodle Soup

Serves 4 people

Ingredients

  • 1 Red Bell Pepper, cut into strips
  • 3 Carrots, peeled and cut into slices
  • 1 jar Thai Kitchen Red Curry Paste
  • 1 cup chicken or vegetable broth
  • Rice Noodles
  • Cilantro
  • Olive oil - 1-2 tbls.

Directions

  1. Boil a pan of water for the noodles, once the water is boiling, turn off heat and put in noodles.

  2. Heat olive oil in a fry pan, add carrots, bell pepper and 1/2 the jar of curry paste. Mix well.

  3. Saute for 2-3 mins.

  4. Add 1 cup chicken or vegetable broth.

  5. Add coconut milk.

  6. Simmer for 5 minutes.

  7. Add soy sauce if desired.

  8. Put noodles in bowls. Top with a ladle or 2 of soup. Top with chopped cilantro.
