Tomato Basil Soup

Ingredients

  • 1/2-3/4 cup butter
  • 8 tbsp cream cheese
  • 1 pint heavy cream
  • 1 pint milk
  • 1.5 tsp garlic powder
  • salt
  • white pepper
  • basil
  • 4 (15 oz) cans diced tomates, blended
  • 1 (8 oz) can tomato sauce
  • 2/3 -1 cup shredded parmesan cheese

Directions

  1. Melt butter in a large saucepan.

  2. Add cream cheese, small pieces at a time, whisking until softened and melted in with butter.

  3. Mix in heavy cream, milk, spices, tomatoes, and tomato sauce.

  4. Bring to a low, gentle simmer and simmer for 15 minutes, whisking occasionally.

  5. Remove from heat and stir in parmesan cheese until blended/melted in.
