Pineapple Upside Down Individual Cakes

Quick and easy to make.
I use the leftover pineapple juice in place of the water. It also made only 5 desserts for me. (I don’t measure, lol)

Serves 6 people

Ingredients

  • 1/4 cup margarine, melted
  • 1/2 cup drained crushed pineapple in own juice-save the juice
  • 1/4 cup brown sugar
  • 1 cup bisquick
  • 1/3 cup cold water (I use the saved pineapple juice-add water if not enough juice)
  • maraschino cherries
  • whipped cream-optional

Directions

  1. Put 2 teaspoons each of the melted margarine in six 6ounce custard cups, then add 1 tablespoon of the crushed pineapple and 2 teaspoons brown sugar to each cup. Stir till well blended. Mix the baking mix and water (leftover juice). Put 2 tablespoons dough in each cup. Microwave on med-high 3 1/2- 4 minutes. Until tops are set and look dry. Invert onto plates, let stand two minutes then remove cups. Be careful cups are hot! Top with cherry and whipped cream. 204 calories if no whipped cream is added.
