Brewmaster’s Bird

Ingredients

  • 1/4 cup paprika
  • 1 tsp cayenne pepper
  • 2 tsp dry mustard
  • 1 tsp onion powder
  • 1 Tbsp brown sugar
  • 2 tsp ground cinnamon
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1 whole chicken, 4 to 5 lbs
  • 1 12 oz can of beer
  • 1 Tbsp fresh lime juice
  • Mesquite chips
  • Drip pan

Directions

  1. Combine ingredients for Spice Rub Mix in bowl. Set aside.

  2. Clean chicken and pat dry. Coat inside and inside with several tbsp of Spice Rub Mix.

  3. Refrigerate at least 1 hour

  4. Preheat grill for indirect cooking with mesquite chips at medium heat.

  5. Pou out 1/3 beer from can.

  6. Add lime juice to can and place on drip pan in center of grill. Position chicken upright over can.

  7. Sprinkle chicken with more Spice Rub Mix.

  8. Cook on covered grill 1 hour.

  9. Remove chicken and let it rest upright for 1 minutes before discarding can.

  10. Carve and eat
