Crock Pot Pot Roast

Ingredients

  • 3-4 lbs Roast cut in 2 pieces
  • 1 chopped onion
  • 1 cup chopped carrots
  • 1/4 cup chopped celery
  • 2 tsp garlic
  • 2 Tbsp vegetable oil
  • 1 tsp salt
  • 1/4 tsp pepper
  • 1/2 cup beef broth
  • 2 Tbsp fresh parsley, chopped
  • 4-6 potatoes

Directions

  1. Heat vegetable oil over medium heat, brown roast on all sides

  2. In crock pot, combine onion, celery, carrot and garlic

  3. Place meat on vegetables, sprinkle with salt and pepper. Pour in beef broth.

  4. Add potatoes and parsley

  5. Cover. Cook on low for 8-10 hours
