Lemon Lime Pound Cake

Ingredients

  • 1 1/2 cups butter softened
  • 3 cups sugar
  • 5 large eggs
  • 2 tblsp lemon zest
  • 1 tsp vanilla extract
  • 1 tsp lemon extract
  • 3 cups all purpose flour
  • 1 cup lemon lime soft drink
  • GLAZE
  • 1 1/2 tbsp lemon juice
  • 1 tbsp lime juice
  • 2 cups powdered sugar

Directions

  1. Preheat over to 350

  2. Beat butter at medium speed with heavy mixer

  3. Gradually add sugar

  4. Beat medium speed 3 – 5 min

  5. Add eggs 1 at a time beat just until blended

  6. Stir in lemon zest and extract

  7. Add flour alternating with soft drink ending with flour

  8. Beat low until just blended

  9. Pour into greased bundt pan

  10. Bake 1 hr 5 min to 1 hr 15 min

  11. Cover after 45 – 50 min with aluminum foil to prevent excessive browning

  12. Cool 10 min

  13. Glaze

  14. Whisk glaze together and spoon over warm to room temp cake
