Marinated Salmon

Serves 4 people

Ingredients

  • 4 salmon fillets or steaks
  • 1/2 C rice vinegar
  • 3 T honey
  • 4 cloves garlic, minced
  • 1 chilli, finely diced
  • 1 T fish sauce
  • 1 t dark soy sauce
  • 1 T soy sauce
  • 3 t crushed lemon grass
  • 3 T oil
  • fresh coriander, chopped for garnishing

Directions

  1. To make marinade:

  2. Place vinegar, honey, garlic, chilli, fish sauce, both soy sauces and lemon grass in saucepan over medium heat. Bring to boil, stirring. Reduce heat, simmer uncovered for 10 minutes, then cool.

  3. Place salmon in shallow dish, spoon marinade over, reserving 1/3 for serving.

  4. Marinate at least 25 minutes.

  5. When ready to cook, if frying, pat salmon dry then cook 2 to 4 minutes each side.

  6. If baking, place salmon and marinade on greased foil, make into parcel and bake at 180oC approx 15 minutes or to your desired likeness.

  7. Meanwhile, reheat remaining marinade and spoon a little over each fillet and garnish with fresh coriander to serve.
