Cafe Style Ginger Gems

Serves 12 people

Ingredients

  • 350 g golden syrup
  • 225 g butter
  • 2 C flour
  • 1/2 C brown sugar
  • 1 t each: baking soda, baking powder, ground cinnamon
  • 2 T ground ginger
  • 1/2 t mixed spice
  • 1 C milk
  • 2 eggs, lightly beaten

Directions

  1. Melt golden syrup and butter.

  2. Combine all dry ingredients in a bowl.

  3. Add milk and eggs to butter/syrup mixture.

  4. Add to dry ingredients and beat vigorously.

  5. (This is a runny mixture).

  6. Pour into oblong mini loaf tins and bake at 180oc for 20-25 minutes.
