Coconut Ice Cup Cakes

Moist, and keep well for a couple of days

Prep time: 20 minutes
Cook time: 30 minutes
Serves 16 people

Ingredients

  • 125 g butter, softened
  • 1 C caster sugar
  • 2 t vanilla extract
  • 2 eggs
  • 1/2 C plain flour
  • 1/2 C self-raising flour
  • 3/4 C dessicated coconut
  • 1/2 C milk
  • Icing:
  • butter, icing sugar, hot water, pink food colouring
  • Extra coconut to sprinkle on top of iced cakes

Directions

  1. Beat butter, sugar, vanilla and eggs until light and fluffy.

  2. Stir in sifted flours, coconut and milk.

  3. Spoon mixture into paper cases.

  4. Bake at 170oC approx 20 minutes, cool on wire rack.

  5. Ice when cold and sprinkle with coconut.
