Orange syrup loaf

Cook time: 40 minutes
Serves 6 people

Ingredients

  • 100 g flour
  • 1 teaspoon baking powder
  • Pinch of salt
  • 100 g butter
  • 100 g soft brown sugar
  • 2 eggs
  • Grated rind of 1 orange
  • Juice of 1 orange
  • 50 g sugar

Directions

  1. Grease a 1 kg loaf tin.

  2. Line the base with greaseproof paper.

  3. Cream the fat and sugar until light and fluffy Add orange rind.

  4. Beat in the eggs one at a time adding a little flour with each.

  5. Spread evenly in the prepared tin.

  6. Bake for 35-40 mins at 180C/350F.

  7. When cake is baked place the orange juice and sugar in a small saucepan heat until the sugar has melts then bring to the boil.

  8. Spoon over the cake in the tin.

  9. Allow to cool for 15 mins then turn out of the tin.
