Shrimp Pasta Salad

Serves 8 people

Ingredients

  • 12oz - 16oz small cooked shrimp 250/350
  • 6oz/8oz - small pasta shells, (1/2 the bag/box) cooked (2-cups dry heaping, 4-cups cooked)
  • 2 cucumbers, peeled, seeds removed
  • 25-30 grape/plumb/cherry tomatoes sliced
  • 25-30 large black olives sliced (about 2/3'rds of the can)
  • 1 cup mayonnaise
  • 3 tsp dill
  • 1/2 tsp salt
  • 1 tsp garlic salt
  • 1 tsp onion powder
  • 1/2 tsp garlic powder
  • 1/4 tsp black pepper
  • Avocado (optional)
  • Bacon Bits (optional)
  • Parmesan cheese grated (optional)

Directions

  1. Cook pasta shells for exactly 10 minutes, remove immediately and rinse.

  2. Peel cucumber, remove seeds, and dice. Cut tomatoes in half. Dice Olives into thirds. Thaw/rinse shrimp. Set aside/chill.

  3. In a large mixing bowl, add mayo, dill, and all seasonings, mix well FIRST. Then add pasta, cucumbers, shrimp, olives. Gently stir. Last, add tomatoes and other optional ingredients.

  4. Chill for 3+ hrs, then serve.

  5. Increase/decrease mayo, dill, salt, pepper to taste.
