Chickpea Salad

Ingredients

  • 2 C. cooked chickpeas ( I used canned)
  • 1/4 C. chopped red onion
  • 1/4 C. carrot ,diced small
  • 1/4 C. bell pepper, diced small (or Cucumbers or radishes)
  • 1 Tbs. fresh lemon juice
  • 2 Tbs. apple cider vinegar
  • 4 Tbs. extra-virgin olive oil
  • 2 small sprigs of rosemary, minced
  • Salt
  • Ground pepper

Directions

  1. Combine dressing ( I used less)

  2. Put all other ingredients in a serving bowl

  3. Add dressing

  4. Chill
