Green Beans Amandine

  • 1 tablespoon extra-virgin olive oil
  • 1 red bell pepper cut into thin strips
  • 1 pound green beans, trimmed (choose thinner beans, all the same size, for better flavor and even cooking)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup water
  • 1 teaspoon grated lemon zest
  • 1 tablespoon fresh lemon juice
  • 1/4 cup slivered almonds


  1. In a large skillet, heat the oil over medium-low heat. Add the bell pepper and green beans and stir to coat. Add the salt, black pepper and water and bring to a boil. Reduce the heat to a simmer and cook for 7 to 10 minutes, or until green beans are tender.

  2. Add the lemon zest, lemon juice and almonds and toss to combine. Serve hot, at room temp, or chilled.
