Skillet-Fried Fish

Serves 6 people

Ingredients

  • 6 - 6oz trout (other) fish
  • 2/3 c yellow cornmeal
  • 1/4 c flour
  • 2 tsp. salt
  • 1/2 tsp. paprika
  • Dash of Cayenne (optional)
  • 1 - 5 1/3oz. evaporated milk
  • cooking oil

Directions

  1. Stir together dry ingredients.

  2. Dip fish in evaporated milk, coat w/ mixture.

  3. Heat oil and cook fish 4-5 min, turn 4-5m.

  4. Cook a few fillets at a time, add more oil.

  5. Drain on paper towel.
