Cranberry chicken

Cook time: 30 minutes
Serves 6 people

Ingredients

  • 1/2 c flour
  • 1/4 tsp. pepper
  • 6 bone/skinless chicken breasts
  • 3 tbsp. margarine
  • 1 c water
  • 1 c fresh or frozen cranberries
  • 1/2 c packed brown sugar
  • dash of ground nutmeg
  • 1 tbsp. red wine vinegar
  • hot cooked rice

Directions

  1. Combine flour and pepper in shallow dish.

  2. Cover chicken in mixture.

  3. Melt margarine over medium, brown chicken.

  4. Remove, keep warm.

  5. In same skillet, combine water, cranberries, brown sugar, nutmeg and vinegar.

  6. Cook and stir until berries burst – 5 min.

  7. Return chicken to skillet. Simmer 20-30 min.

  8. Baste with sauce and serve over rice.
